Peanut Butter Protein Cookies
These are the EASIEST protein cookies ever. They are also super peanut-buttery, full of protein, and make a great bedtime snack.
I made two batches of this recipe: one with whey protein and eggs (for my sister), as well as a vegan option using Vega protein and chia ‘eggs’. Both versions turned out amazing, but the ones with the eggs have a slightly better texture.
1 cup peanut butter
2 scoops of your favourite vanilla protein - I love this one from Vega
2 eggs OR 2 tablespoons chia seed + 1/4 cup water
Mix all ingredients together in a large bowl until smooth.
Roll into 12 equal balls and set on a lined cookie sheet.
Press down each cookie using a fork.
Bake at 350 degrees for 10 minutes until slightly brown.
Tips and tricks:
These can be stored in the fridge and they also freeze well.
You can line your cookie sheet with parchment paper or try this reusable version!
