Healthy Puffed Quinoa Cookies
I recently spent ten days balancing my macros and eating totally clean (more on this later). During those ten days I quickly found myself craving something that resembled dessert, so I tried to figure out what ingredients I could use without overdosing on sugar. Quinoa, nut butters, and maple syrup were all on the list of foods I was eating that week - in moderation of course - so I came up with this 'cookie' recipe. The macro count for these Puffed Quinoa Cookies is fairly well-balanced in comparison to other treats, and they are vegan/gluten-free! The recipe takes just minutes to throw together, and the cookies are tasty with just a hint of sweetness.
Note: Puffed quinoa is sometimes difficult to find in stores, but you can make your own using this method.
1 cup puffed quinoa
1/2 nut butter (I used cashew butter, but any kind will work)
Combine the nut butter and maple syrup in a medium sized bowl.
Gently stir in puffed quinoa.
Separate into 12 equal portions. You can roll these into balls or flatten them like cookies.
Refrigerate for at least 30 minutes before eating.

Carbs: 6.5 grams
Fat: 4.7 grams
Protein: 2.5 grams
Tip: Store leftovers in the fridge for up to one week. You can separate the cookies with wax paper so they don't stick together. Enjoy!
