6 scrumptious muffin recipes

I LOVE MUFFINS. The possibilities are endless and they are super easy to grab on-the-go, but unfortunately a lot of store-bought muffins are packed with sugar, making them an unhealthy choice - at that point you might as well eat a cupcake! So, I’ve put together a list of my favourite muffin recipes; they are all gluten and dairy free, and a few happen to be paleo as well!

Carrot Cake Muffins by Texanerin Baking

These are SO yummy. The recipe works with chia ‘eggs’, and I leave off the frosting but sometimes throw in some raisins instead!

Chocolate Chip Avocado Muffins by The Healthy Maven

My friends and family love these. If you don’t have applesauce you can swap it for 1 mashed banana.


Coconut Flour Muffins by The Coconut Mama

If you like coconut, you’ll love these muffins. You can even use coconut sugar instead of the honey/maple syrup!

Date and Banana Muffins by Savoury Spin

These have a great texture with a nice natural sweetness. I leave out the cacao nibs and use oat flour instead of buckwheat.


Almond Pulp Blueberry Muffins by Health Bean Nutrition

A great recipe for those of us who make our own almond milk! I use 1 cup gluten-free flour and 1/2 cup oat flour in my version.


Pistachio Muffins by Making Thyme for Health

I used just 1/4 cup maple syrup and they still had a hint of sweetness. I’d like to play around with adding in even more spinach!

Important note: Due to the ingredients, most of these muffins are best stored in fridge!
